Mushrooms Are Part of the Next Step for Trustman Farms
Trustman Farms is growing one step at a time.
Right now, we are building our foundation as a micro farm in San Tan Valley, Arizona. We are starting small, learning our systems, growing fresh food, and working toward a larger long-term vision.
One of our near future plans is to begin growing gourmet mushrooms, especially oyster mushrooms.
Mushrooms fit naturally into the direction of Trustman Farms because they are fresh, flavorful, high-value, and useful in everyday meals. They also allow us to expand our farm offerings without needing large acreage right away.
For a micro farm, that matters.
Why Mushrooms Make Sense for a Micro Farm
As a small farm growing in a suburban community, we have to be intentional about what we grow.
Some farm enterprises require a lot of land, equipment, fencing, pasture, irrigation, and infrastructure. Those are still part of our long-term goals, but mushrooms give us a way to expand sooner while working within the space we currently have.
Mushrooms can be grown in controlled environments, which makes them a strong option for small-scale farms. With the right setup, they can be grown indoors, in grow rooms, tents, shelves, or other efficient systems.
That means we can continue building Trustman Farms now while preparing for bigger land-based enterprises later.
Starting With Oyster Mushrooms
Oyster mushrooms are one of the main mushrooms we plan to start with.
They are popular for a reason. Oyster mushrooms grow quickly, have a great texture, and are one of the most beginner-friendly gourmet mushrooms to produce.
They are also versatile in the kitchen. Their mild, savory flavor makes them useful in all kinds of meals, including stir-fries, tacos, pasta, rice bowls, soups, eggs, burgers, sandwiches, and plant-based dishes.
For customers who want fresh local food, oyster mushrooms are a great product because they are practical, flavorful, and easy to cook.
Fresh Mushrooms Taste Better
Freshness makes a big difference with mushrooms.
Grocery store mushrooms often spend time being transported, stored, and handled before they ever reach your kitchen. Locally grown mushrooms can be harvested closer to the time they are sold, which can mean better quality, better texture, and better flavor.
That is one reason we are excited to add mushrooms to Trustman Farms.
We want to provide food that feels fresh because it is fresh.

How Oyster Mushrooms Can Be Used
One of the best things about oyster mushrooms is how easy they are to use.
They can be cooked simply in a hot pan with olive oil or butter, garlic, salt, and pepper. They can also be seasoned more heavily depending on the meal.

Our long-term goal is to grow into a diversified farm with multiple enterprises that work together over time. That includes microgreens, mushrooms, a larger market garden, pastured chicken, pastured beef, orchard systems, composting, and more regenerative farming practices.
Mushrooms can play an important role in that system.
They allow us to turn small spaces into productive food-growing areas. They also open the door to future composting and nutrient cycling systems, where farm waste and organic materials can be managed more intentionally.
As we grow, we want each part of the farm to support the larger picture.
Building Slowly and Learning the System
We are not trying to rush the mushroom side of the farm.
Growing mushrooms well takes proper setup, cleanliness, humidity control, airflow, timing, and consistency. Like every other part of farming, it requires learning the process and respecting the details.
Our plan is to start small, test the system, learn what works, and improve over time.
That may begin with small batches of oyster mushrooms before expanding into larger production. Once we understand our process better, we may eventually explore other gourmet mushroom varieties as well.
The goal is not just to grow mushrooms.
The goal is to grow quality mushrooms people actually want to buy and cook with.

While oyster mushrooms are the main focus for the near future, we may eventually look into other gourmet mushrooms depending on demand, growing conditions, and production success.

Serving Local Customers in Arizona
Trustman Farms is based in San Tan Valley, Arizona, and our goal is to serve local customers throughout the surrounding region as we grow.
As mushrooms become available in the future, we hope to offer them to customers in San Tan Valley and nearby areas such as Queen Creek, Mesa, Gilbert, Chandler, Florence, Coolidge, Casa Grande, Phoenix, and other Central Arizona communities.
Our focus is local food first.
We want people in our area to have access to fresh produce and future gourmet mushrooms grown close to home.
What This Means for Trustman Farms Customers
For our customers, this means more variety is coming.
Microgreens are one of our early farm products, but mushrooms are part of the next layer of growth. Over time, we want Trustman Farms to become a trusted local source for fresh greens, mushrooms, vegetables, herbs, pasture-raised foods, and seasonal farm products.
Mushrooms are one step in that direction.
They give us a way to offer something fresh, useful, and different while continuing to build the farm carefully.
Growing Into the Future
Trustman Farms is still at the beginning of the journey, but the direction is clear.
We are building a micro farm now with the long-term goal of eventually buying land and expanding into a larger working farm. Mushrooms are part of that bridge between where we are today and where we are going.
They allow us to grow more food, build more skills, serve more customers, and expand our product offerings in a smart way.
The future of Trustman Farms will not happen all at once.
It will happen one crop, one system, one harvest, and one step at a time.
